Unlucky for her I got stuck preparing food for a church event the next morning which included cooking 4 dozen eggs...
(Have you ever seen 4 dozen eggs cooking in a pot before? Kind of cool.)
However, we managed to have some fun by eating at her favorite mexican food restaurant, which also happens to be right across the street. And she promises to come back soon!
